Vegane Baked Apple Pie Oatmeal

The days are getting shorter and the mornings are getting colder. And suddenly Nicecream and Smoothie Bowl, which were the perfect refreshment in the morning when the outside temperature hit 30°C, no longer seem like the best choice. For me personally, autumn also marks the beginning of the time when my stomach wants something warming in the morning. Since I'm more of a sweet breakfast person, porridge is usually the first choice.

But sometimes it is just allowed to be a little fancier. Especially if you have plenty of time in the morning and love to celebrate your breakfast in peace.

This recipe is as brilliant as it is simple. It has the warming and filling properties of porridge, while at the same time you think you're eating a delicious piece of cake. And let's face it, who doesn't dream of cake for breakfast? This one, however, comes completely without white flour or refined sugar and delivers all the valuable ingredients of oatmeal. So fire up the oven and let's get going!

For 2 servings you need:

  • 150g rolled oats

  • 400ml vegetable milk

  • 2 small apples

  • sweetener of your choice

  • 1TL baking powder

  • cinnamon, ground vanilla

  • For the decoration:

  • some nut butter


  1. Preheat the oven to 356°F convection.

  2. Cut some fine slices from the apple and put them aside for decoration.

  3. Cut the rest of the apples into fine cubes.

  4. Now mix the apple cubes with cinnamon and some sweetener of your choice (I used date syrup) and spread them on the bottom of a small baking dish.

  5. Mix the oatmeal with the vegetable milk and baking powder and add the vanilla and also some date syrup or similar.

  6. Now layer the oatmeal mixture on the apple cubes and decorate them with the thin apple slices.

  7. Then put the whole thing in the oven for 20 to 25 minutes.

  8. Enjoy the Apple Pie Oatmeal best warm garnished with some nut butter. For those who are not a fan of nut butters: Vanilla sauce also fits perfectly ;)


Tip: If you have any left over, you can easily store it in the refrigerator and reheat it in the microwave.
