Quick Vegan Apple Celery Salad
Crunchy raw vegetable salads are not only really healthy, they also taste great!
Even if the weather fairy is currently of a different opinion - spring is here and with it the desire for lighter food. Especially after the Easter feast, the craving for fresh, crunchy vegetables is huge. This delicious raw vegetable salad of tart celery and sweet and sour apples is prepared in no time and is a real vitamin and nutrient bomb! The pumpkin seed oil also adds an extra dose of unsaturated fatty acids.

For 4 servings you will need:
For the salad:
2 apples (sweet-sour )
For the dressing:
1/2 tsp. mustard
1 tablespoon pumpkin seed oil
2 tablespoons light balsamic vinegar
herb salt, pepper
Wash the celery thoroughly and cut it into small cubes.
Peel 2 apples, remove the core and dice the pulp.
Mix 1/2 tsp mustard, 1 tbsp pumpkin seed oil and 2 tbsp light balsamic vinegar to a dressing and season with herb salt and pepper.
Then mix it well with the celery and apple cubes.
Now the salad should soak in the fridge for at least 1 hour. Before serving, you can garnish it with a few roasted pumpkin seeds.
